The Hippurate Hydrolysis Test measures an organism’s ability to create hippuricase, an enzyme that hydrolyzes the substrate hippurate. It identifies Streptococcus agalactiae, Campylobacter jejuni, Listeria monocytogenes, and Gardnerella vaginalis.
